Preparation of the recipe " Italian Potato Salad "

Start by boiling the potatoes (unpeeled) in lightly salted water for approximately 20 minutes or until the fork between easily; then let them cool. Mix the olive oil, lemon juice, salt and pepper in a small bowl, let it stand. Cut the tomatoes in half, the celery in very thin slices, the capers, the onion cut very finely in julienne and the olives in quarters (of the type that you like). All this to a salad bowl. For the vinaigrette, mix the oil, lemon juice, salt and pepper, and stir. Add the potatoes cut in half to the salad bowl, the vinaigrette and stir gently. Serve on plates and rectify with salt and pepper if necessary.
